🌞 BBQ Chickpea Quesadillas 🌞
If you’re having a ✨single person Big Game watch party ✨ like me, you might wanna celebrate with these delish BBQ chickpea quesadillas! These babies only require 4 ingredients and are a simple, delicious plant based dinner to make! I can’t believe I never made this before because it was so stinking delicious. If I’m being honest, it was a little messy to eat, but it’s mostly because I piled on all the toppings (avocado, vegan yogurt, cilantro)! The recipe is down below so save/share do all the things. I promise you you’re gonna love it!
✨BBQ Chickpea Quesadilas✨
1 tablespoon hummus (I used hopefoods jalepeno hummus)
1 tablespoon BBQ sauce
1/2 cup chickpeas
2 tortillas (I used sietefoods cassava tortillas)
Any toppings you want!
In a bowl, mix together chickpeas, hummus, and BBQ sauce until well combined. Season with salt and pepper, to taste.
In a skillet over medium high heat, add one of your tortillas. Spoon chickpea mixture on the tortilla, then cover it with the other. Allow to cook for 2-3 minutes or until the bottom tortilla gets nice and toasted before flipping. Allow to cook for another 2-3 minutes before transferring to a cutting board. Cut into quarters and spoon on the toppings!
