✨Chickpea Socca with Hummus and Greens✨
Socca aka chickpea flour flatbread… it’s been a while 💕. This easy gluten free flatbread is one of my favorite bases to have for breakfast or lunch with just like all the toppings, especially if you’re doing Passover Sephardic style 😎Today. I added hummus, greens, curried cauliflower, a fried egg, and pickled onions. 🤩 It takes 10 minutes to make and is just a nice way to change it up from your usual tortilla or bread!

The deets: place a cast iron skillet in an oven on broil to preheat (around 500F (260C)). Whisk 1/2 cup chickpea flour, 1/2 cup water, 1/2 tablespoon olive oil, salt and pepper until smooth. Let sit for at least 5 minutes ideally 10-15.
Take cast iron out of oven and spray or coat pan surface with olive oil. Add chickpea mixture to the pan and, using a rubber spatula, spread it evenly along the bottom. Place back under the broiler and bake until it gets crispy and blisters in spots, around 2-4 minutes. Take out of the oven and let cool before using a spatula to take out of the pan. Serve with all your fav toppings. EAT
