Looking for weeknight dinner inspo? I’ve got ya! 😍This dish is actually based on a take on a Tlayuda which is a traditional Oaxacan snack. Essentially it’s toasted tortillas with beans, protein, and veggies. I made a tofu sofrito to add instead of chicken or steak (which you can make ahead of time btw), but feel free to do whatever. 🤩 Also, if you have a cast iron pan, cook your crumbled tofu in it. It is a game changer.

The deets: Preheat your broiler and heat a skillet with 1 tablespoon avocado oil over medium heat until shimmering. Crumble 1 block of tofu, patted dry, into the pan and let sit to crisp up for 3-4 minutes before stirring. Add 2 teaspoons chili powder, 2 teaspoons cumin, pinch cayenne, 1 teaspoon garlic powder; and a pinch of salt. Stir to combine.
To make your pizza, toast two tortillas over open flame or in a skillet. Top one tortilla with canned refried black beans and your tofu mixture. Drizzle some enchilada sauce on top, then top with other toasted tortilla. Top with vegan cheese and broil for 1 minute until the cheese melts and gets bubbly (keep your eye out!). Top with tomatoes, cilantro, more enchilada sauce, and pickled onions. EAT!
