Need a spring-y lunch for your weekly meal prep? I’ve got you! You know I’m beyond excited to start meal prepping one of my fav lunches! Roasted broccoli, chopped up fine, and then tossed with quinoa make for a super satisfying, plant based meal. I love that the ingredients are probably all things you have in your pantry right now! This recipe reminds me a lot of a tabbouleh, mostly because of the lemon and excessive fresh herbs, 🥰which I’m convinced make any great! I personally love mine with some thiccc sliced halloumi. It’s super easy to meal prep but tastes absolutely delish even after several days. Don’t have poms? Feel free to leave them out or sub in raisins. We love that!
