Bibimbap, especially if you roast all of your leftovers on a sheet pan, makes such a delicious and satisfying dinner perfect for any time of the week. Just top with rice and an egg and you’re good!
In my bowl, I’ve got sautéed bean sprouts, roasted Bok choy and green beans, pickled carrot, daikon, and onion, and kimchi. To sauce it up, I just used a mix of soy sauce, sesame oil, and gochujang.
