A little Sunday meal prep inspiration for ya! 🥵 Honestly I don’t know where I get my inspiration sometimes, but this combo is so good and I want to make this as soon as i get home! A Greek restaurant in the mall used to make potatoes roasted in lemon, herbs, and garlic and I made them, pairing them with salmon and a quick veggie Greek salad. Seriously Greek takeout who?

The deets: Preheat oven to 420F (215C). Toss 3 cups baby potatoes in 2 tablespoons olive oil, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp salt, pepper , if using, and rosemary. Spread evenly on a baking sheet, taking care to give the potatoes enough space. Bake for 40 minutes, flipping halfway through until the potatoes get crispy. If they still aren’t crispy I like to blast them at 475F (245C) for another 10 minutes until crispy. Once out of the oven and when still hot, drizzle with the juice of half a lemon and season with salt. EAT
