✨Plant Based Sausage Broccolini Pasta✨
Move over feta pasta 🤣. So good of a combo that my best friend’s boyfriend from Italy gave me the seal of approval on my vegan version. 🤣. But actually, this sausage broccolini pasta was on my list of things to make for sooo long and I am so happy it came to light! The recipe could not be easier for a weeknight (or whenever you want it) so save/share/tell your friends. You never know when you might need it.
The deets: cook two servings of pasta according to the package instructions reserving 1/2 cup pasta water once cooked. While the pasta is cooking, heat 1/2 tablespoon olive oil over medium heat. Add 1/2 thinly sliced shallot, 1 clove minced garlic, and a pinch of red pepper flake and fennel seed and cook for 2-3 minutes until slightly browned. Add 1 cup chopped broccolini and toss to coat in the oil. Cool for 3-4 minutes until slightly wilted and browned in spots. Add 1 crumbled vegan sausage patty cooked to the package directions (I used drpraegers breakfast sausage) and toss to coat. Cook for 1-2 minutes until the sausage is warmed through. Add cooked, drained pasta and approximately 2-3 tablespoons of pasta water. Toss to coat and add pasta water 1 tbsp at a time if it looks dry. If you have, stir in 1/2 tablespoon Calabrian chili paste (I get mine from traderjoeslist). Divide into two bowls and serve with nutritional yeast or parm. EAT
