Have you tried slow roasting your salmon? 😅. With our second heat wave of the summer, this is the only reason I want to turn on my oven. Cooking salmon low and slow like this keeps the fish (any fish really) from drying out. Such a win win!

The deets: preheat the oven to 275° F (135°C). Line a baking sheet with foil or parchment paper. Take 2 4-6 oz salmon filets and top with olive oil to coat and season with salt and pepper. Bake for 15-25 minutes (will depend on the thickness) until the fish is cooked to your preference. EAT
